  • Our Chef & Founder was diagnosed with Coeliac Disease in 2020 so everything is gluten-free. All ingredients are certified GF to standard less than 20ppm. We strive to source 100% GF whenever possible.

  • We aim to achieve an accreditation from Coeliac UK as soon as possible (once open) and will update here once achieved

  • In GF baking another binding and thickening ingredient is needed instead of gluten. We only use natural ingredients for this (such as Psyllium husk, Chia Seeds and Eggs, as appropriate) We don’t use any artificial gums such as xanthan gum.

  • We only use organic Psyllium husk to avoid any issues of contamination

  • We don’t use any sodium nitrate (pink salt) cured meats such as ham and bacon. Only Parma ham made with salt and pork and time

  • We don’t use any refined sugars and only use mindful amounts of unrefined and natural sugars. Embracing natural sweetness from fruits, honeys, maple syrup, coconut and unrefined cane sugar

  • We avoid chocolate with added seed oils and palm fat, only using chocolate with natural cocoa butter and from sustainable sources

  • No seed oils are used in any of our cooking and baking, only olive oils, butter, coconut and beef tallow as fats used appropriately

  • No artificial flavours and colourings only natural sources of flavour and colour

  • No added baker’s yeast, only natural fermentation 

  • No microwave on the premises

  • Minimal or no cling film used, instead reusable lids or biodegradable wrap used. Where it is needed, minimal amounts used with a commitment to exploring kinder alternatives.

  • No aluminium foil used

  • No plastic chopping boards, wooden alternatives used with a wood food safety policy in place

  • No plastic cooking utensils, wooden or stainless steel alternatives

  • Where plastic is unavoidable for food storage it will be BPA free and any plastic containers supplied with ingredients re-used to avoid purchasing new plastic storage containers.

  • No hot food and sauces stored or chilled in plastic containers

  • Once plastic containers reach the end of there usable life, they will be sent for recycling 

  • All soft and hard plastics sent for recycling

  • All cardboard recycled, reused or returned to suppliers for re-use

  • No non stick cookware, stainless steel and cast iron alternatives in place

  • Biodegradable chemicals for cleaning and sanitising

  • Biodegradable piping bags

  • Biodegradable sponges and cloths for cleaning
